The README and the release notes do not describe 0.21.0 #788

What goes wrong

The README does not mention Karaoke Mode, Performance Mode, recording, stem choice per mode or the GPU encoder. The statement "StemDeck does not upload your audio" (lines 52, 54, 250) is still true because upload and streaming integrations were postponed, and has to be rechecked when one ships. There are no user docs and no release notes for 0.21.0 yet.

NEW in 0.21.0. Found on the big-release branch (draft pull request #784); the work is not released yet.

Possible direction

Add a short Modes section to the README and write the release notes from the feature documentation.
