build(deps): update wit-component to 0.244

This updates only the direct wit-component dependency from 0.216 to 0.244, separately from #644. wasm-compose and wasi-vfs-cli remain unchanged so CI can show whether the wit-component update is independently compatible.

ComponentEncoder::encode now requires &mut self, so declare the local encoder binding as mutable.
