It would be nice (and should be doable) to allow chanmon_fail_consistency (and maybe full_stack_target) to test things like the use-cases implied by #326 by allowing it to save/restore each ChannelManager with a potentially-stale-but-not-more-than-the-latest-monitor-save copy and ensure that everything continues as expected.
