[iOS][testing] Run runtime and libraries tests on pre-release macOS and iOS 27 #129606
We should validate core functionality on macOS and iOS (tvOS) 27 before .NET 11 release. We can leverage the iphone and appletv scouting queues and run one of tests across the full apple-mobile portion of runtime-extra-platforms. Per https://www.apple.com/os/macos/, the macOS 27 is only going to be available for Apple sillicon machines so we can reduce the testing matrix by removing x64 configs.
We're working with dnceng team to get suitable devices for testing. We would like to test this before .NET 11 shipping but it is not a release blocker.
