Action provider proposal: Ophis (CoW Protocol) ERC-20 swaps #1334

Quick update since opening this: @ophis/agentkit-ophis is live on npm (provenance builds from https://github.com/ophis-fi/ophis), and the Ophis stack behind it now runs on 12 EVM chains including Unichain. It maps to the DeFi swaps item on the wishlist. If there is maintainer interest I will port it into typescript/agentkit/src/action-providers/ophis/ with the changeset, docs block, and an example per CONTRIBUTING (signed commits, Apache 2.0 for the vendored copy).
