gh-copilot: update Copilot metrics endpoints & schemas to latest API

The gh-copilot plugin is partially out of date with GitHub's Copilot REST API (2026-03-10). It pins the right API version but drops several response fields on extract, loses org identity on org metrics, and skips the 28-day reports.

Field gaps (in 2026-03-10, dropped on extract): daily/weekly/monthly_active_copilot_cloud_agent_users, used_copilot_coding_agent, used_copilot_cloud_agent, ai_adoption_phase / totals_by_ai_adoption_phase, pull_requests.copilot_suggestions_by_comment_type, totals_by_cli.token_usage.avg_tokens_per_request, totals_by_cli.last_known_cli_version.

Org identity: ExtractOrgMetrics writes org data into the enterprise table with EnterpriseId: "" and drops organization_id.

Missing endpoints: enterprise-28-day/latest, users-28-day/latest, organization-28-day/latest (different day_totals[] envelope).

Likely bug: report metadata parsing reads res.Body twice (io.ReadAll then parseReportMetadataResponse), second read is empty.

Reminder: new model fields need a migration script + GetTablesInfo() update.
