Remove the stale Identity index entry

Deleting this catalog leaves the active visual-reference index with a dead relative link: docs/research/visual-references/README.md:21 still points to identity/README.md. Anyone browsing the documented categories will now receive a missing-file error, so remove or replace that category row as part of retiring these references.
