- Replace the "slowly rolling out, stay tuned" warning with a plain beta note
- Add Jira to the available channels (channel setup for Jira shipped Sep 28)
- Remove the "Coming soon" table of planned channels, a public roadmap
commitment, and keep the link to request a channel
- Replace two notes that read as notes to the writer ("has not been
documented publicly", "not documented yet") with what readers need

Brings the Channels page in line with the beta and the Sep 29 changelog.
Still missing: a Jira setup section. The page covers setup for Slack, GitHub, and Linear only. That needs product input from Arnau Siches and is not in this PR.
