Remove manifest overwrites

The manifest overwrites are conflicting with the latest androidx test libraries:
androidx.test:core-ktx:1.4.1-alpha07

Building with both androidx.test as well as the image cropper fails compilation with the error:

	is also present at [com.github.CanHub:Android-Image-Cropper:4.0.0] AndroidManifest.xml:41:13-49 value=(@android:style/Theme).
	Suggestion: add 'tools:replace="android:theme"' to <activity> element at tempFile1ProcessTestManifest12009438010904517303.xml:27:9-34:20 to override.

Isn't it possible to just update this library to target 12 and get rid of the entire build.gradle hacky whacky scripting?
