feat: add ClickHouse warehouse driver #573

Add first-class ClickHouse support as the 12th database driver. Includes driver implementation, full integration across 23 touchpoints (registry, discovery, dbt, finops, docs), E2E tests for 4 server versions, and comprehensive documentation.
